A Holiday Must, Must, Must: My Momma’s Thomas Jefferson Pound Cake

Even though I love my healthy version of pumpkin pie, one dessert I must, must, must make every Thanksgiving with my momma is Thomas Jefferson pound cake. It’s light and fluffy, not to mention AB-solutely delicious. What I love more about the cake, however, is the fact that it’s just such a family tradition. I’ve brought it from Murray, Kentucky to Los Angeles for my family, but there’s nothing like making the cake in my home with my family. Love, love, love the fact that little Brooksie is our new taste tester now!

Ingredients

  • 3 sticks butter
  • 8 oz cream cheese
  • 3 cups sugar
  • 6 eggs
  • 1 tsp vanilla
  • 1 tsp almond flavoring
  • 3 cups flour

Cooking Directions

Preheat oven to 325 degrees. In a large bowl, blend the 3 sticks butter , 8 oz cream cheese and 3 cups sugar.  Once blended, add 6 eggs (one at a time into the mixture). Afterwards, add 1 tsp vanilla, 1 tsp almond flavoring and  3 cups flour. Beat well. Pour everything into an Angel Food Pan and cook at 325 degrees for 1 hour to an 1 hour and 15 minutes.
