Almond Butter & Fruit Protein Balls

My kids and I LOVE peanut butter & jelly sandwiches. However, they aren’t the most healthy and nutritious option due to the high sugar content. But, as you know–there is always a healthier substitute.

Today on my YouTube channel, I’m sharing a recipe for almond butter & fruit protein balls that not only taste delicious but give you a boost of energy, too! I like making them as an after school snack or something we can pack on the go. The kids love them!

Ingredients:

  • 2 scoops vanilla protein powder
  • 1 cup dried dates
  • 1 cup large oat flakes
  • 3 tbsp. unsweetened almond milk
  • 1 tsp. pure vanilla extract
  • 1/4 cup ground flax
  • 1/2 cup almond butter
  • Large baking sheet
  • Parchment paper
  • Mixing bowl
  • Mixing spoon
  • Spatula

Directions:

Step 1: Place all ingredients in a large mixing bowl. Stir until combined. 

Step 2: Pull apart mixture and form 1 inch balls. Place on parchment paper. 

Step 3: Place in a freezer tight container and keep in fridge to enjoy anytime!
