Nothing is quite as festive as baking and decorating holiday trick or treats with the family. And as soon as October arrives, I know we're in for three months of camping out in the kitchen between Halloween, Thanksgiving, and Christmas. It's so, so, so simple to just pop over to the grocery store and grab the needed cookies or cupcakes for the holiday parties you'll be attending, but if you have an extra few minutes, these Halloween treats are simple and easy to make. After picking up our pumpkin at Mr. Bones, I was in such a trick or treat-y mood, so I decided to whip up a few of my favorite fall goodies!
You will need 6-8 tart apples, thoroughly washed. Here’s a tip: dip each apple in a pot of boiling water to completely remove the wax (this will help the caramel stick better). Melt the caramel in a double boiler, and add a dash of milk to make it thin enough to coat your apples. Make sure you have sharp enough sticks, and some great sprinkles for decorating. Dip, let chill, and enjoy!
- 2 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 cup butter, softened
- 1 1/3 cups sugar
- 2 eggs
- 1 cup mashed cooked or canned pumpkin
- 3/4 cup milk
Sift together the flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg into a bowl. Cream butter and sugar until light and fluffy; add in eggs. Blend in pumpkin. Stir in dry ingredients with the milk, blending until batter is smooth. Spoon batter into well-greased and floured or paper-lined muffin pan cups. Fill about 2/3 full. Bake at 375° for 25 minutes.
Chocolate Covered Pretzels:
Making your own chocolate covered pretzels is a really easy and creative way to make a fun treat for your guests this holiday season. Simply melt the chocolate with a double boiler (low and slow is a great technique for this…if too much heat is applied too quickly the chocolate will burn, and that’s no, no, no good), dip pretzels, and decorate as you please. It takes no time at all and adds a great personal touch.
