I recently connected with Virginie from Crave and Cook and let me tell you... this woman has changed the way I cook for my family. I thought that I had my meal prep plan down, but she has helped me create meals on a whim that can feed the entire family in under 30 minutes.
Virginie is from Belgium and moved to Los Angeles a few years ago. You might have seen some of her features on Goop, C Magazine and Huffington Post. This woman is truly passionate about making good meals and keeping them healthy. What I love about what Virginie is doing is that she shares her weekly menu with her followers. So, naturally I invited her over to help me throw some easy meals together for myself and my family.
The first meal we cooked up together are the Blueberry Banana Breakfast Bars. These are perfect to make on a Sunday and easy to heat up every morning for breakfast and the kids LOVE them.
Blueberry Banana Breakfast Bars
30 min Makes 12 bars
This makes the perfect breakfast or snack. No refined sugar in it, just a bit of maple syrup and fruit!
- 2 cups of old fashioned rolled oats
- 1/2 cup of flower (we used almond flour)
- 1 tsp of baking powder
- 1/2 tsp of salt
- 1 tsp of vanilla
- 3 bananas, mashed
- 3/4 cup of apple sauce
- 2 cups of blueberries
- 1/4 cup of maple syrup
- Preheat the oven at 350F. Grease and line the 8-inch square baking pan.
- Combine all the ingredients (adding blueberries at the end) and transfer to baking dish.
- Bake for 20-25 minutes until cooked through.
