3-Step Banana Bread Skulls

For all the mommas who hate to cook… You’ll LOVE this banana bread recipe. It’s gluten-free, delicious, and only takes 3 steps. What could be better!?

I actually found this recipe on The Minimalist Baker–a great food blog I love to follow. It was originally just for the loaf of bread but since it’s almost Halloween, Brooksie and I broke out our skull baking pan to add a little festive flair. Even though this recipe is easy, it looks like it took a ton of effort. It’s all about the pan, people.

He also insisted on wearing his PJ Masks costume while being my sous-chef. I mean–pick your battles, right?

3-Step Banana Bread:

  • 3 medium ripe bananas
  • 1/2 tsp. pure vanilla extract
  • 1 egg
  • 3 tbsp. grapeseed or coconut oil, melted
  • 1/4 cup organic cane sugar
  • 1/4 cup organic brown sugar
  • 2-3 tbsp. honey
  • 3.5 tsp. baking powder
  • 3/4 tsp. sea salt (or Pink Himalayan salt)
  • 1/2 tsp. ground cinnamon
  • 3/4 cup unsweetened milk
  • 1 1/4 cup almond or flaxseed meal
  • 1 1/4 cup gluten free flour bread (I used brown rice flour!)
  • 1 1/4 cup gluten free oats
  • 1 large mixing bowl
  • whisk
  • Skull or fun Halloween shaped pan

Directions:

STEP 1: Mash banana in a large mixing bowl. Add all ingredients except the almond milk, meal, flour, and oats. Whisk to combine. Once mixed, add the almond meal, gluten free flour, and oats. Stir.

STEP 2: Scoop the mixture into the shaped pan.

STEP 3: Bake at 350 F. My oven gets pretty hot–so mine only needed 35 minutes.

How easy is this recipe!? And it’s delicious. Serve with almond butter, honey, or just as is.
