#MEATLESSMONDAY: Vegan Monkey’s No Bake Brownie Bites

We love a little dessert at our house. My kids must have inherited that from me–I love sweets!

To finish off Sue Larsen’s (Vegan Monkey) #MEATLESSMONDAY meal plan, we’ve got a delicious and easy recipe to satisfy any sweet tooth. These are no-bake so it’s a good way to get the kids involved in the kitchen. They’ll love being able to add all the ingredients in the bowl and create their own little bites.

Make them ahead of time and keep in the fridge for freshness. Trust me–you’ll want to make a big batch. You’ll be craving them for weeks!

Ingredients:

  • 1 cup chopped nuts of your choice
  • 1 cup pitted dates (softened with hot water for 10 minutes)
  • 1/4 cup cacao powder
  • 3 tbs. powder peanut butter (as optional flavor)
  • 1 tsp. vanilla
  • 2 tbs. coconut oil

Directions:

STEP 1: Blend all ingredients in a food processor until it forms a ball

STEP 2: With a small cookie scoop, shape into bites and place in an air-tight container. Refrigerate for at least an hour

STEP 3:  Once chilled, they are ready to eat! For added flavor, roll the bites in shredded coconut or chopped nuts
