#MEATLESSMONDAYS: Vegan Monkey’s DIY Noodle Bowls

We’re back with another #MEATLESSMONDAY! I loved spending time in the kitchen with Sue (aka Vegan Monkey). Not only did she teach me some new recipes–but she reminded me how easy it all can be. You don’t need to carve out hours in your schedule or learn any major culinary tricks. All you need is whole and healthy ingredients to ensure your family is getting what they need.

Vegan Monkey’s Noodle Bowls are nothing new–but her dressing is. It’s delicious! Also–am I the only one who likes leftovers? It may sound weird but I really do. That’s why I love this recipe. You can make the dressing ahead of time, prepare and chop all the ingredients, and quickly mix together for any meal.

Ingredients

For Noodle Bowls: 

  • 1 lb. cooked thin whole grain spaghetti, cooked al dente
  • 2 Red Bell peppers, sliced thinly
  • 2 Yellow Bell peppers, sliced thinly
  • 4 carrots, peeled and sliced thinly
  • 1 bunch of scallions (cut in small thin slices including some of green stem)
  • Kale, roughly chopped
  • 1 head of small red cabbage (cut into squares and chopped roughly)
  • 1 English cucumber, peeled and cut thinly
  • Fresh chopped cilantro
  • 1 cup unsalted peanuts

For Dressing: 

  • 1 cup nut butter
  • 1 clove garlic, peeled and chopped fine
  • 4 tbs. tamari
  • 1/3 cup agave or honey
  • 1 tsp. grated fresh ginger
  • 2 tbs. orange juice
  • 1 tbs. miso paste
  • hot water
  • sesame oil: optional

Directions For Dressing: 

STEP 1: Mix all ingredients except for miso paste and hot water

STEP 2: For a thicker dressing, mix miso paste and hot water add to dressing. (You can buy this in the international section of most grocery stores!)

STEP 3: Boil noodles and sesame oil can be drizzled on cooked noodles to keep it from sticking and add flavor.

STEP 4: In large or separate bowls, throw in veggies and/or ingredients of your choice. Mix noodles and dressing in. To make the ingredients last longer, prepare each bowl right before eating. If you plan on eating throughout the week, keep noodles separate.
