Molly’s Holiday Treats: Chex Mix Two Ways

While baking during the holidays is always so, so, so fun, I think it’s great when we can get the little ones involved. But it’s not always easy when electric mixers and ovens are involved. That’s why this week I went back to an easy classic: make your own Chex Mix. Not only are all of these recipes super easy, but all you need is some bowls and a microwave. A holiday snack that is yummy, quick and simple? LOVE. All of these recipes looked so good, and I was having trouble narrowing it down. SO, since they were so easy, I thought, why not make 2? I picked Caramel-Chocolate Drizzles and PB & Chocolate Blast as a departure from the classic Chex party mix. They were both seriously DE-lish. But I warn you, they are addicting! I couldn’t stay away from them while they were still hot. I didn’t even care that it may have been burning my hand with every bite. Two words: worth it.

#MollyTips: When waiting for the mixes to dry, make sure you put wax paper on the baking sheet before you lay it out. It’ll be much easier to break up when it dries.

Caramel-Chocolate Drizzles

Ingredients

  • 3 cups Corn Chex cereal
  • 3 cups Rice Chex cereal
  • 1/2 bag caramels
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 1/4 cup semisweet chocolate chips

Cooking Directions

In a large microwaveable bowl, mix cereals. In a medium microwavable bowl, microwave caramels, butter and milk uncovered on high for 2-3 minutes, stirring after each minute until caramels are melted and mixture is smooth. Pour over cereal, gently stir until coated. Microwave on high 3-4 minutes, stirring after each minute until just beginning to brown. Spread on coated wax paper to cool. In a small microwavable bowl, microwave chocolate chips uncovered on high for about one minute. Drizzle over the cereal and refrigerate until it’s set!

PB & Chocolate Blast

Ingredients

  •  6 cups Rice Chex cereal
  • 1 cup white vanilla baking chips
  • 1 cup peanut butter chips
  • 1 cup red and green candy coated chocolate candies
  • 1 cup dry-roasted peanuts

Cooking Directions

Line 2 cookie sheets with foil or waxed paper. Place three cups cereal in a large bowl. In a small microwavable bowl, microwave white vanilla baking chips uncovered on high for about 1 minute. Pour the melted chips over the cereal and stir to coat. Spread the mixture in a single layer on a cookie sheet. Refrigerate. Repeat with the rest of the cereal and the peanut butter chips. Break up the pieces in a large bowl. Add candy and peanuts.
