It’s Cinco de Mayo and this #EverydaySuperMomma is ready to have a margarita!! Okay, maybe I’m a little extra excited for my festive adult beverage, but give me a break because I was just pregnant and unable to partake of such yummy libations.
Last year, I shared my FAV skinny margarita recipes and this year we are taking it to the next level… Well, actually our margie is layered, so we are rocking out on multiple levels over at the Molly Sims test kitchen! For you pregnant ladies or those who don’t drink, this recipe is super tasty sans the booze, too. Speaking of tasty, I’ve also got a great guacamole recipe.
Last summer, I showed you how delicious and easy it is to make aguas frescas. Now we are going to take what we learned over to Margaritaville for a truly inspired cocktail. We are going to make two separate juices so we can layer our drink. The trick to layering is simple. We rely on our old pal, gravity to do the work for us. The heavier juice will be the base or bottom of the drink and the lighter juice will be our float or top layer.

Watermelon Juice – the float
NOW we are ready to make our cocktail…
Stir well and then slowly pour your “float” of watermelon juice. Don’t freak out if it looks like the juices are mixing, just take your time and pour slowly. Practice makes perfect. It is not the worst thing in the world if your margarita doesn’t come out layered. I promise, it will still taste heavenly!!
