When I’m entertaining, a Champagne cocktail makes it onto the menu quite often. I think a Champagne cocktail is even classier than a glass of bubbly itself and has just a little bit more kick.
I just love this Pomegranate Champagne Cocktail recipe from Ellie Krieger. Pomegranate juice adds just the right amount of tart sweetness and will wow your guests with its beautiful color. Plus, what a great way to get your daily dose of antioxidants, right?!
Ingredients • 1 tsp. fresh pomegranate seeds (Ellie’s recipe lists these as optional, but I highly recommend them!) • 4 ounces Champagne • ½ tsp. pomegranate juice (store-bought is fine) • 1 tsp. cassis (a black currant liqueur)
Directions Place fresh pomegranate seeds into a Champagne flute. Pour Champagne into the flute, and add pomegranate juice and cassis.
And of course, here’s the mommy-to-be version that I’ll be drinking: Try replacing the Champagne with Martinelli’s sparkling apple cider and nix the cassis altogether. The sparkling cider even helps settle your stomach if you’re dealing with morning sickness!
