My Classic Southern Super Bowl Recipe
I hope everyone’s looking forward to Super Bowl Sunday! I’m from the South so you know I love my football, but even if you’re not a fan of the game it’s another excuse to entertain. And when it comes to planning your menu, Super Bowl parties mean the really good stuff. It’s time to take a short break from all the kale and zucchini “pasta” and dig into my personal favorite, Rotel Dip. If you’ve never had Rotel Dip before, don’t knock it till you try it! It’s a classic Southern dish and it’s to-die-for.
1 large block of Velveeta cheese
2 cans original Rotel diced tomatoes
1 log spicy ground sausage
Cut cheese into 1-inch cubes and then melt in a crock-pot or on the stove at medium heat. When cheese is almost melted add undrained Rotel tomatoes. In a medium sauté pan, brown the sausage until done. Add the sausage to the cheese mixture, then cover and simmer until thoroughly heated. Serve with tortilla chips.
